Applesauce Carrot Cake - cooking recipe

2 3/4 c. plain flour
3 tsp. baking soda
1 tsp. salt
3 tsp. cinnamon
1 tsp. nutmeg
4 eggs
3/4 c. vegetable oil
2 c. sugar
1 tsp. vanilla
2 c. applesauce
3 c. grated carrots
1 c. raisins
1 c. black walnuts
Preparation

Heat oven to 350\u00b0.
Mix together the flour, soda, cinnamon and nuts.
Beat eggs; stir in oil, sugar and vanilla.
Add applesauce and carrots to this mixture, stirring just to moisten.
Mix together the flour mixture and egg mixture.
Fold in raisins and nuts.
Pour batter into a 9 x 13-inch baking pan sprayed with vegetable spray.
Bake 45 minutes.
This cake serves 24 to 30 people.
Cut slices small.
