A New Twist On Potatoes Au Gratin - cooking recipe

2 1/2 lb. Idaho potatoes, peeled and sliced thin
1/2 tsp. salt
pinch of nutmeg
4 oz. Parmesan cheese
3 oz. butter
1 qt. milk
1 pt. heavy cream
1/4 tsp. pepper
4 oz. Blue or Gorgonzola cheese
2 oz. Oriental bread crumbs
1 medium onion, caramelized
Preparation

Use a \"Mandolin\" to slice the potatoes very thin, taking care to protect your fingers so you don't slice them along with the potatoes. Put in deep pot and cover with milk. Bring to boil and simmer until potatoes are par-cooked. Season the potatoes with salt and pepper. Layer the potatoes in a buttered casserole dish, alternating them with the cheese and onion. Dot with butter. Add heavy cream and top with sprinkling of bread crumbs. Bake in slow oven until the potatoes are cooked and the dish is slightly browned, about 30 minutes at 325\u00b0.
