Sweet Potato Cake - cooking recipe

Ingredients
    1 1/2 c. oil
    4 eggs, separated
    1 1/2 c. grated sweet potatoes
    4 Tbsp. hot water
    3 tsp. baking powder
    1 tsp. cinnamon
    2 c. sugar
    2 1/2 c. flour
    1 c. nuts, chopped
    1 tsp. vanilla
    1/4 tsp. salt
    1 tsp. nutmeg
Preparation
    Cream oil and sugar until smooth.
    Add egg yolks.
    Beat until creamy.
    Add hot water, then dry ingredients, which have been sifted together.
    Stir in potatoes, nuts and vanilla.
    Mix well. Beat egg whites stiff and fold into mixture.
    Bake at 350\u00b0 for 25 to 30 minutes (three 9-inch layers).
