Bruschetta - cooking recipe
Ingredients

3 cloves garlic
2 tsp. lemon juice (fresh is best)
salt and pepper
olive oil
fresh basil
1 or 2 tomatoes, diced
fresh loaf bread
good olive oil
Preparation

Mash the garlic cloves in a bowl big enough to hold tomatoes. (I use the garlic press, then mash them.)
Squeeze or pour lemon juice.
Sprinkle liberally with salt and mix well.
Add about 2 tablespoons olive oil and a dash of Italian dressing if you like. Add tomatoes and toss.
Add more oil or dressing if the tomatoes aren't thinly coated.
Add basil, about 15 leaves.
Chill.
Toast the bread and serve with extra virgin olive oil and the tomato mix. If you want to toast the tomatoes already spread on the bread, DO NOT add basil until you remove it from the oven.
