Gratin Of Fresh Spinach And Mushrooms(A Gourmet Vegetable Dish) - cooking recipe

Ingredients
    2 c. fresh spinach, picked and cleaned
    1/2 c. sliced mushrooms
    1 c. cream (reduced by half)
    1/4 c. fresh grated Parmesan cheese
    2 shallots, fine diced
    1/2 tsp. garlic, fine diced
    1 oz. sherry
    salt and fresh black pepper
    1 oz. clarified butter
Preparation
    Sweat shallots, garlic and mushrooms until tender.
    Add spinach; cook until tender.
    Add sherry, salt and pepper.
    Remove from heat and drain.
    Place spinach-mushroom mixture in small casserole dish.
    Top with reduced cream and cover with grated Parmesan cheese.
    Gratin in a 400\u00b0 oven until golden brown on top and cream is bubbling.
    Serve right from the oven.
