Orange Buttermilk Muffins - cooking recipe

Ingredients
    3/8 c. shortening (6 Tbsp.)
    1/2 c. sugar
    1 egg
    2 c. all-purpose flour
    1 tsp. baking soda
    1/8 tsp. salt
    1/2 c. orange (including peel)
    1 c. buttermilk or yogurt
Preparation
    Cream the shortening and sugar together.
    Add egg; mix well and set aside.
    In a separate bowl, mix together the flour, soda and salt.
    Chop the orange half in a blender with the buttermilk or yogurt.
    Add alternately the flour mixture to the sugar mixture, stirring only until the ingredients are moistened.
    Pour into greased muffin cups.
    Bake at 400\u00b0 for 20 to 25 minutes. Makes 9 to 12 small muffins.
