Feta-Tomato Crostini - cooking recipe

Ingredients
    3 (6-inch) French bread rolls, split
    olive oil
    1 (7 oz.) pkg. Feta cheese, crumbled
    coarse ground garlic powder with parsley
    3 small tomatoes, chopped
    1 1/2 Tbsp. chopped fresh mint
    lettuce leaves
    fresh mint sprigs (for garnish)
    1 1/2 Tbsp. balsamic vinegar
Preparation
    Brush cut side of each roll with olive oil; place on baking sheet. Broil 6-inches from heat (with electric oven door partially opened) 2 minutes or until lightly browned. Place cheese evenly on each roll. Sprinkle lightly with garlic powder. Place tomatoes over cheese; drizzle with balsamic vinegar and sprinkle with mint. Serve on lettuce leaves and garnish, if desired. Serve immediately. Yield: 6 servings.
