Homemade Salami - cooking recipe

Ingredients
    5 lb. hamburger or venison burger
    5 tsp. Morton Tender Quick salt
    2 1/2 tsp. mustard seed
    2 1/2 tsp. coarse ground pepper
    1 tsp. liquid smoke
    2 1/2 tsp. garlic salt (if you would like)
Preparation
    Mix and knead like bread dough.
    Refrigerate 24 hours.
    Knead again, refrigerate again and knead again.
    Do this again for 1 more day (3 days total).
    On the fourth day, form into 4 logs.
