Zucchini Bread - cooking recipe
Ingredients

3 eggs, well beaten
2 c. sugar
3 tsp. vanilla
1 c. oil
2 c. shredded (unpeeled) zucchini
3 c. flour
1/2 tsp. baking powder
1 tsp. salt
1 tsp. soda
1 tsp. cinnamon
1/2 c. nuts, chopped
1 c. coconut (optional, but good!)
Preparation

Beat eggs until light and fluffy.
Add sugar, vanilla and oil. Blend well.
Stir in zucchini.
Sift together flour, baking powder, salt, soda and cinnamon.
Blend with egg mixture.
Fold in nuts and coconut.
Turn into two greased and floured 9 x 5-inch loaf pans.
Bake at 350\u00b0 for 1 hour.
Makes 2 loaves.
