Chimichangas(Leftover Meal) - cooking recipe

Ingredients
    1 1/2 c. leftover meat (pork, chicken, steak or even hamburger)
    1 medium onion, chopped
    1 (8 oz.) can enchilada sauce or tomato sauce
    4 large flour tortillas
    1/2-inch hot oil in skillet
    1/4 c. black olives, chopped
    shredded lettuce
    chopped tomatoes
    1 c. shredded Cheddar cheese
    hot peppers to taste
Preparation
    In skillet, heat 1 tablespoon oil.
    Add onions.
    Cook until clear.
    Add meat, olives, enchilada sauce and hot peppers to taste.
    Divide mixture among the flour tortillas.
    Fold ends in; roll into a packet (you may fasten with toothpicks, if necessary). Heat oil to hot.
    Brown for 1 minute on each side.
    Serve on bed of lettuce with cheese on top and tomatoes on side.
