Fluffy Potato Doughnuts - cooking recipe

Ingredients
    3 eggs
    1 1/3 c. sugar
    1 tsp. vanilla
    1 c. mashed potatoes, cooled
    2 Tbsp. melted shortening or oil
    4 c. flour
    6 tsp. baking powder
    2 tsp. nutmeg
    1 tsp. salt
    1/2 milk
Preparation
    Beat eggs with sugar and vanilla until light.
    Add potatoes and shortening.
    Sift together dry ingredients; add alternately with milk to potato mixture, beating well.
    Chill dough 3 hours. Fry in deep hot fat (375\u00b0) for about 3 minutes, or until brown, turning once.
    Drain.
    Dip in sugar.
    Makes 2 to 2 1/2 dozen.
