Eggplant Casserole - cooking recipe

Ingredients
    1 medium size eggplant, cut in slices
    1 chopped onion
    1 chopped green pepper
    1 chopped tomato
    1/2 tsp. salt
    1/2 c. whole wheat bread crumbs
Preparation
    Cook eggplant about 20 minutes in boiling water.
    Rinse in cold water and cube.
    Simmer onion, green pepper and tomato in a little oleo or butter.
    Season with salt.
    Add mixture to eggplant.
    Put in casserole.
    Sprinkle with bread crumbs.
    Bake at 350\u00b0 for 25 minutes.
    Serves 3 to 4.
