Broccoli Stuffed Baby Portabella Mushrooms - cooking recipe

Ingredients
    1 10 oz. pkg. baby mushrooms or large button mushrooms
    2 Tbsp. butter
    1/2 c. red onion chopped
    1 c. broccoli chopped
    1/4 c. seasoned dry bread crumbs
    5 1/4 oz. boursin spreadable cheese with garlic and herbs
    1 Tbsp. red peppers roasted and chopped
Preparation
    Preheat oven to 350\u00b0.
    Remove mushroom stems and chop 1/2 c. mushroom stems.
    Discard extra.
    In a 10 inch skillet melt butter, saute onion and broccoli for 2 minutes, stirring occasionally. Add mushrooms stems, cook an additional 2 minutes, stirring occasionally; cool slightly.
    Stir in bread crumbs and cheese. Spoon vegetable mixture into mushrooms caps.
    Place on ungreased baking pan; garnish with bell pepper pieces.
    Bake for 15 minutes. This dish takes 45 minutes to prepare:
    30 minutes prep and 15 minutes cooking.
