Red Cabbage - cooking recipe

Ingredients
    3 lb. red cabbage, cored and shredded
    1 1/2 c. beef stock
    1/2 c. firmly packed brown sugar
    1/2 c. cider vinegar
    4 Tbsp. (1/2 stick) butter
    1/4 tsp. freshly ground black pepper
    salt to taste
Preparation
    Combine all the ingredients, except the salt, in a 10 to 12-quart stainless steel pot.
    Bring to a boil; stir, cover and simmer over low heat, stirring occasionally, 1 hour and 15 minutes.
    Add salt to taste.
