St. Peter'S By The Sea Snapper - cooking recipe

Ingredients
    4 (6 to 8 oz.) red snapper fillets
    1 1/4 c. fresh lime juice
    1/2 c. white vinegar
    1/2 c. finely chopped fresh parsley
    1 c. finely chopped green onion
    1/2 c. finely chopped white onion
    1/2 c. minced garlic
    1 1/2 c. Canola oil
    salt to taste
    freshly ground black pepper to taste
    1 Tbsp. chopped hot pepper (your choice, optional)
    1 (6 oz.) can tomato paste
    flour for coating fish
    lime and tomato slices for garnish
Preparation
    Marinate the red snapper fillets in the lime juice for at least 1 hour at room temperature.
    In a large bowl, combine the vinegar, parsley, green onion, white onion and garlic.
    Slowly whisk in 1/2 cup of the oil, followed by the salt, pepper, hot pepper and tomato paste.
    Whisk until the ingredients are thoroughly combined.
    Set aside.
