Au Gratin Vegetable Dish - cooking recipe

Ingredients
    3 to 4 c. vegetables, cooked (reserve 1 c. liquid)
    1/4 c. green pepper, chopped
    1/2 c. celery, chopped
    1/3 c. onion, finely chopped
    3 Tbsp. margarine
    2 Tbsp. flour
    salt and pepper
    1/4 c. grated Cheddar cheese
    1/4 c. Parmesan cheese
    paprika
Preparation
    Saute green pepper, celery and onion in margarine.
    Slowly add flour, vegetable liquid, salt, pepper and Cheddar cheese.
    Cook until thickened and cheese melts.
    Pour some of the cheese sauce into a 10 x 6-inch baking pan. Top with vegetables.
    Pour remaining sauce over. Sprinkle with Parmesan and paprika.
    Can be warmed in oven or broiled 4-inches from heat for a few minutes or until top is lightly brown.
    Serves 4 to 6 people.
