Quick Vegetable Medley - cooking recipe
Ingredients

1 (16 oz.) can Italian-style stewed tomatoes
1/4 to 1/2 c. zucchini, sliced and chopped
1/4 to 1/2 c. yellow squash, sliced and chopped
1/4 to 1/2 c. mushrooms, sliced and chopped
1/4 to 1/2 c. green/red/yellow peppers, sliced and chopped
1/4 to 1/2 c. carrots, sliced and chopped
salt and pepper to taste
oregano to taste
Preparation

In large skillet, saute stewed tomatoes and fresh vegetables until vegetables are tender-crisp.
Add salt, pepper and oregano to taste.
Serves 3 to 4.
