Trebie'S Jambalaya - cooking recipe
Ingredients

1 lb. sausage link, sliced
3 large onions, chopped
2 garlic cloves, chopped
1 green pepper, chopped
1 1/2 c. celery, chopped
3 Tbsp. tomato paste
16 oz. can tomatoes
1/2 tsp. thyme
1/4 tsp. cayenne
1 1/2 c. water
1 c. rice
2 lb. shrimp
1 to 2 bay leaves
Preparation

Saute onions, pepper, celery, garlic and sausage in large pan. Pour off any drippings.
Add tomatoes, tomato paste, thyme, bay leaf, salt, cayenne, water and rice.
Cook 30 to 40 minutes.
Clean and devein shrimp while other is cooking.
Add shrimp last 10 minutes.
May need more water and seasoning.
May use chicken instead of, or with shrimp.
Serve with creole seasoning to taste.
