Clams Casino Dip - cooking recipe
Ingredients

3 (8 oz.) cans minced clams or 4 (6 1/2 oz.) cans (reserve 1 can clam juice)
1 small jar chopped pimento
1 stick butter
1 lb. bacon
1 large onion, chopped
1 green pepper, chopped
3 stalks celery, chopped
2/3 roll Ritz crackers
1/2 tsp. salt
1/4 tsp. pepper
2 Tbsp. Parmesan cheese
1 Tbsp. lemon juice
hot sauce
Preparation

Fry bacon; drain fat.
Chop bacon.
Saute pepper and celery. Add onion and chopped bacon; continue cooking until onion is translucent.
Crumble crackers.
Melt butter.
Add butter to crackers.
Add crumb mixture to vegetables in skillet.
Add pimento, clams and clam juice; season with salt, pepper, Parmesan cheese, lemon juice and hot sauce (2 to 3 drops).
Place in casserole and bake at 350\u00b0 for 35 to 40 minutes.
Serve in chafing dish with crackers.
