Heart Smart Coleslaw - cooking recipe

Ingredients
    1/2 c. safflower mayonnaise
    2 Tbsp. rice vinegar
    1 tsp. Dijon mustard
    1/2 head cabbage, shredded
    1/2 green pepper, finely chopped
    1/2 white onion, finely chopped
Preparation
    Combine mayonnaise, vinegar and mustard. Chill.
    Just before serving, toss cabbage, green pepper and onion.
    Moisten with dressing.
