Tomato-Onion Relish - cooking recipe

Ingredients
    2 large cloves garlic, finely chopped
    1 tsp. oil
    2 onions, cut into thin half rings
    2 c. tomatoes, drained and chopped
    2 tsp. red wine vinegar
    2 Tbsp. chopped fresh basil
    pinch of crushed red pepper flakes
    pinch of black pepper
Preparation
    Saute garlic in oil until lightly browned (1 to 2 minutes). Stir in onions and pepper flakes.
    Saute for 3 minutes. Stir in tomatoes.
    Lower heat.
    Cover and cook 5 minutes. Uncover and cook 5 minutes longer.
    Stir in vinegar and black pepper. Cool. Refrigerate unless using immediately. Stir in basil just before serving.
