Peaches For Tarts Or Fried Pies - cooking recipe

Ingredients
    1 gal. peaches
    1 c. white vinegar
    4 c. sugar
Preparation
    Wash, core, peel and cut pears or apples in pieces.
    To prevent darkening, drop into water containing 2 teaspoons salt and vinegar per gallon of water.
    Drain, then boil 5 minutes in syrup. Pack fruit into hot jars, leaving 1/2-inch headspace.
    Cover with hot syrup.
    Adjust lids.
    Process in boiling water bath (pints 15 minutes and quarts 20 minutes).
