Corine'S Carrot Cake - cooking recipe

Ingredients
    2 c. sugar
    1 1/2 c. canola oil
    4 eggs or egg substitute
    2 c. flour
    1 tsp. salt
    2 tsp. cinnamon
    1 tsp. soda
    3 c. grated raw carrots
    1 c. chopped nuts
    1 c. golden raisins
    1 tsp. grated orange rind
    1 tsp. almond extract
Preparation
    Cream together sugar, oil and eggs.
    Sift together dry ingredients and mix with first 3 ingredients.
    Add grated raw carrots, nuts, raisins, orange rind and extract.
    Bake in Pam-sprayed angel food cake pan at 350\u00b0 for 1 hour and 15 minutes.
