Surprise Muffins - cooking recipe

Ingredients
    1 egg
    1 c. milk
    1/4 c. salad oil
    2 c. self-rising flour
    1/4 c. sugar
    3 Tbsp. jelly (your favorite)
Preparation
    Heat oven to 400\u00b0.
    Grease the bottoms of 18 muffin cups or line with baking cups.
    Beat egg, milk and oil in medium bowl with fork until blended.
    Mix flour and sugar to egg mixture and stir until moistened (will look lumpy).
    Spoon batter into muffin cups, filling each cup 1/3 full.
    Drop 1/2 teaspoon of jelly onto the center of each and top with enough batter to fill 2/3 full.
    Bake for 20 to 25 minutes.
