Lemon Meringue Pie - cooking recipe
Ingredients

1 c. water
3/4 c. sugar
3 Tbsp. flour, made into paste
4 eggs, separated
juice and grated rind of 1 lemon
2 Tbsp. sugar (for meringue)
1 baked pie shell
Preparation

Boil water and sugar together; add flour paste and cook 5 minutes. Mix the yolks of eggs, lemon juice, rind and salt. Add 1 tablespoon of hot sugar mixture to yolk mixture and stir. Repeat 3 times. Add this mixture to the remainder of the sugar mixture. Cool slightly. Fluff 1/2 of egg whites until stiff. Add to sugar mixture. Pour into previously baked crust. Make a meringue of the remaining egg whites by beating whites until stiff. Add 2 tablespoons sugar. Cover pie with meringue. Bake at 400\u00b0 for 5 to 7 minutes.
