Simply Good Chicken Casserole - cooking recipe
Ingredients

3 lb. chicken (broiler fryer or breasts)
1 qt. water
1 tsp. salt
1 tsp. pepper
1 can cream of chicken soup, undiluted
1 can cream of celery soup, undiluted
1 (8 oz.) carton sour cream
1/2 tsp. pepper
2 stacks Ritz crackers, crushed
1/4 c. butter, melted
Preparation

Put chicken in large pot with water, 1 tsp. salt and 1 tsp. pepper; bring to a boil.
Cover, reduce heat and simmer for 1 hour or until tender.
Cool chicken slightly; skin and debone and cut into bite-size pieces.
Combine chicken, soups, sour cream and 1/2 tsp. pepper; stir well.
Place 1/2 of crushed crackers in lightly greased 11 x 7 x 1 1/2 inch baking dish.
Spoon chicken mixture over crackers.
Top with remaining crackers and drizzle with butter.
Bake at 325\u00b0 for 35 minutes or until lightly browned. Yield: 6 to 8 servings.
