Cheese Grits - cooking recipe

Ingredients
    1 c. grits
    1 1/2 tsp. salt
    4 c. boiling water
    3 egg yolks
    1/2 stick oleo
    3 Tbsp. flour
    1 Tbsp. dry mustard
    3 c. grated cheese
    3 egg whites
Preparation
    Cook grits in boiling water and salt.
    Cool slightly.
    Add egg yolks, one at a time, and beat well after each addition.
    Melt oleo; add flour and mustard to it, then add this mixture to warm grits.
    Add 2 cups grated cheese; stir.
    Fold in stiffly beaten egg whites.
    Put in greased 9 x 13-inch glass baking dish and cover with the remaining cheese.
    Bake 30 to 40 minutes in a 350\u00b0 oven.
