Mom'S Lemon Meringue Pie - cooking recipe
Ingredients

7 Tbsp. cornstarch
1 1/2 c. sugar
1/3 tsp. salt
2 c. boiling water
1/3 c. lemon juice
2 Tbsp. oleo
1 Tbsp. grated lemon rind
3 eggs, separated
Preparation

Combine cornstarch, sugar and salt.
Add water and cook until thick, stirring constantly.
Cook and place over low heat for about 10 minutes, stirring occasionally.
Beat egg yolks slightly and add a little hot mixture. Stir and pour back.
Cook 2 minutes, stirring constantly.
Remove from heat and stir in lemon juice, oleo and grated peel.
Cool to room temperature without stirring. Pour into baked shell and top with meringue.
