Chow-Chow - cooking recipe

1/2 c. salt
4 qt. chopped green tomatoes
2 qt. chopped cabbage, finely chopped
2 c. chopped sweet red bell pepper
2 c. chopped cucumbers
1 c. chopped onion
1 1/2 c. brown sugar, packed
2 Tbsp. mustard seed
1 Tbsp. celery seed
4 1/2 c. cider vinegar
1 Tbsp. pickling spice
Preparation

Sprinkle salt over vegetables; mix thoroughly. Let stand 3 to 4 hours; drain thoroughly. Press to remove liquid. Add sugar and spices to vinegar and simmer for 15 minutes. Add vegetables and heat to boiling. Pack relish, boiling hot, into sterilized jars, leaving 1/8 inch headspace. Adjust caps. Makes 8 pints.
