Penne With Plum Tomatoes And Cucumbers In Basil Vinaigrette - cooking recipe

Ingredients
    2 lb. plum tomatoes, cut into 1/2-inch cubes
    1/2 c. olive oil
    2 Tbsp. white wine vinegar
    1 lb. penne or other long tubular pasta
    1 small cucumber, pared, halved lengthwise, seeds removed, and sliced thick into half-moons
    1/2 c. chopped red onion
    1/2 c. chopped roasted red bell pepper
    1/4 c. chopped basil
    1/2 tsp. salt
Preparation
    Combine the tomatoes, oil, basil, vinegar and salt in a large bowl.
    Cook the pasta in plenty of boiling salted water until firm to the bite, about 10 minutes; drain.
    Combine the pasta, tomato mixture, cucumber, red onion and red peppers; toss to blend. Serve at room temperature.
