Pecan Raisin Muffins - cooking recipe

2 c. biscuit baking mix
1/4 c. seedless raisins
1/4 c. butter or margarine
1/2 tsp. cinnamon
2/3 c. milk
1 tsp. vanilla
1/2 c. chopped pecans
1/2 c. firmly packed brown sugar
Preparation

Preheat oven to 375\u00b0.
Lightly grease muffin tin. Blend biscuit mix, milk, raisins and vanilla. Stir well.
Melt margarine. Add margarine, pecans, brown sugar and cinnamon to batter and blend well.
If hand mixing, stir at least 30 strokes. Spoon into prepared muffin tin and bake for 20 minutes.
Yields 12 muffins.
