Pepperoni Zucchini Casserole - cooking recipe
Ingredients

4 c. zucchini, peeled, seeded and chopped
1/2 c. chopped onion
2 c. Mozzarella cheese, shredded
2 Tbsp. Parmesan cheese, grated
1/2 to 1 c. pepperoni (small chunks)
salt, pepper, basil and oregano to taste
1/4 c. oil
4 eggs
1 c. Bisquick
Preparation

Preheat oven to 350\u00b0.
Spray a 9 x 13-inch baking dish with Pam; set aside.
In a large bowl, combine zucchini, onion, cheeses, pepperoni and spices.
Mix thoroughly and set aside.
In another bowl, combine oil, eggs and Bisquick.
Mix well.
Add to zucchini mixture and blend thoroughly.
