Low-Fat Honey-Lemon Cake - cooking recipe

Ingredients
    vegetable cooking spray
    1 3/4 c. plus 1 tsp. all-purpose flour, divided
    2 tsp. baking powder
    1/4 tsp. salt
    3/4 c. sugar
    1 tsp. grated lemon rind
    1/2 c. plus 2 Tbsp. skim milk
    1/4 c. vegetable oil
    1/4 c. nonfat sour cream alternative
    3 Tbsp. honey
    1 tsp. lemon extract
    3 egg whites
    1/4 c. sifted powdered sugar
    1 1/4 tsp. lemon juice
Preparation
    Coat a loaf pan with cooking spray.
    Dust pan with 1 teaspoon flour; set aside.
    Combine remaining 1 3/4 cups flour and next 4 ingredients in a large bowl.
    Combine milk and next 4 ingredients in a small bowl, stirring well.
    Add to flour mixture and beat at medium speed of an electric mixer until smooth.
