Crawfish Ole - cooking recipe

Ingredients
    1 each red, yellow and green bell pepper, cut into thin rings
    1/4 c. olive oil
    2 cloves garlic, minced
    1 c. thick and chunky salsa
    1 lb. crawfish tails, rinsed and drained
    1 Tbsp. grated lemon rind
    1 1/2 c. (6 oz.) grated Monterey Jack cheese
    lemon slices and fresh cilantro sprigs for garnish
Preparation
    Layer pepper rings in 13 x 9-inch baking dish. Combine olive oil and garlic; drizzle over pepper rings. Bake at 400\u00b0 for 20 minutes. Remove from oven. Stir salsa into pepper rings. Top with crawfish tails. Sprinkle with lemon rind and Monterey Jack cheese. Return to oven. Bake 10 to 12 minutes. Garnish with lemon slices and cilantro sprigs.
    Serves 4.
