Maja Blanca Maiz - cooking recipe

Ingredients
    3 c. young corn
    1 c. sugar
    4 c. rich coconut milk
    1 c. rice flour
    5 Tbsp. fresh coconut oil
    toasted coconut
    sugar (for dusting)
Preparation
    Scape corn from cobs and strain through coarse muslin cloth. Add the sugar, rice flour and coconut milk and cook over moderate heat, stirring constantly and adding coconut oil little by little to avoid sticking. When thickened, pour into coconut-oil greased platters. Serve with toasted coconut with sugar.
