Sweet Potato Casserole - cooking recipe
Ingredients

4 c. peeled sweet potatoes, thinly sliced
1 Tbsp. fresh onion, chopped
1 1/2 Tbsp. diet margarine
1/2 c. milk
1/4 tsp. lite salt
1/4 tsp. pepper
1 Tbsp. fresh parsley
2 Tbsp. grated Parmesan cheese
Preparation

Coat a 1 1/2-quart casserole dish with nonstick cooking spray. Layer sweet potatoes in dish; sprinkle onion evenly over top. Melt margarine and add milk, salt and pepper; pour evenly over potatoes.
Sprinkle parsley and Parmesan cheese over potatoes. Bake, covered, for 1 1/2 hours at 325\u00b0.
Turn heat up to 375\u00b0; remove lid and allow cheese to turn light brown before removing from oven.
Serves 6 (1/2 cup servings).
Each serving contains 137 calories, 3.5 g protein, 3 g fat, 2.6 mg chol. and 69 mg sodium.
