Eggplant Parmesan - cooking recipe
Ingredients

1/2 c. sliced onion
2 cloves garlic, minced
2 Tbsp. oil
1 lb. can stewed tomatoes (2 c.)
2 tsp. sugar
1 tsp. salt
1/4 tsp. pepper
1/2 tsp. oregano
1/2 tsp. basil
Preparation

In a large skillet, saute onion and garlic until yellow.
Add tomatoes and seasonings.
With 2 knives, cut up and blend ingredients.
Simmer sauce, uncovered, about 20 minutes until slightly thick.
