Artichoke Relish - cooking recipe

Ingredients
    1 peck artichokes
    8 large onions
    12 green bell peppers
    6 red bell peppers
    3 qt. white vinegar
    1/2 box mustard seed
    1/2 box celery seed
    5 to 6 c. sugar
    1 c. flour
    3 Tbsp. turmeric
    3 Tbsp. dry mustard
    2 tsp. cinnamon
    1 tsp. black pepper
Preparation
    Wash and grind artichokes.
    Cover with 3/4 cup salt.
    Let stand 30 minutes.
    Grind onions and peppers.
    Bring vinegar to a boil and add mustard seed and celery seed.
    Boil 15 minutes.
    Mix sugar, flour, turmeric, dry mustard, cinnamon and black pepper. Add a little water to make a paste.
    Add enough hot vinegar to dissolve.
    Add gradually to hot vinegar.
    Boil 15 minutes. Squeeze salt from artichokes.
    Combine artichokes, onions and bell peppers to vinegar mix.
    Bring to a boil.
    Put in hot sterilized jars and seal.
    Makes 17 to 18 pints.
