Vegetable Cheese Burrito - cooking recipe

Ingredients
    4 c. peeled, seeded and chopped tomatoes
    1 1/2 c. cubed avocado
    1 c. chopped green onions
    1/4 c. fresh lime juice
    1 Tbsp. chopped jalapeno pepper
    8 (6-inch) flour tortillas
    2 c. (8 oz.) shredded low-fat Monterey Jack cheese
    1/2 c. nonfat sour cream
    chopped tomatoes (optional)
    fresh sprig of cilantro (optional)
Preparation
    Combine first 6 ingredients in a medium bowl; stir well and set aside.
    Place tortillas on a baking sheet coated with vegetable cooking spray.
    Top each tortilla evenly with 1/4 cup cheese. Bake at 400\u00b0 for 1 1/2 minutes or just until cheese melts.
