Squash Patties - cooking recipe
Ingredients

4 to 5 yellow crooked neck summer squash
1 small onion, chopped
1/4 c. butter
1 egg, beaten
1/2 c. cracker crumbs
1/2 c. grated cheese
salt and pepper to taste
Preparation

Cook squash with onion in a little water to get it cooked. Drain and add butter; then mash. To this, add egg, cracker crumbs, cheese, salt and pepper. Put into balls and roll in cracker crumbs. Fry in skillet.
