Basic Puerto Rican White Rice - cooking recipe
Ingredients

3 tsp. corn oil
2 1/2 c. short grain rice
4 to 4 1/2 c. boiling water
Preparation

Heat the oil in a medium saucepan with a tight fitting lid. Add the rice and saute quickly over medium-high heat for 2 minutes.
Add the water and cook until almost all of the liquid has evaporated.
Stir well.
Reduce the heat to very low and cover the rice.
Cook for 20 more minutes, stirring after 10 minutes.
