Green Pepper Steak - cooking recipe

Ingredients
    1 lb. beef chuck or round, trim fat
    1/4 c. soy sauce
    1 clove garlic
    1 1/2 tsp. grated ginger or 1/2 tsp. ground ginger
    1/4 c. oil
    1 c. green onion, sliced thin
    1 c. red or green peppers, cut into 1-inch pieces
    2 stalks celery, chopped
    1 Tbsp. cornstarch
    1 c. water
    2 tomatoes, cut into wedges
Preparation
    Cut beef across grain into thin strips.
    Combine soy sauce, garlic and ginger.
    Add beef.
    Toss and set aside.
    Heat oil in wok.
    Add beef and toss over high heat until browned.
    Cook on low heat until tender, about 30 to 40 minutes.
    Turn up heat and add vegetables.
    Toss until vegetables are tender-crisp.
    Mix cornstarch with water.
    Stir and cook until thickened.
    Add tomatoes and heat.
    Serve over boiled rice.
