Ingredients

1 c. sugar
1/4 c. cake flour
1/8 tsp. salt
2 Tbsp. butter
5 Tbsp. lemon juice
1 Tbsp. grated lemon peel
2 well beaten egg yolks
2 egg whites, beaten until peaks form
1 c. scalded milk
Preparation

Mix sugar, flour and salt.
Add butter, juice, lemon peel and egg yolks, then scalded milk.
Fold in egg whites.
Set in a 1 1/2-quart buttered pan in hot water.
Bake at 325\u00b0 for 1 hour. Serves 4 to 6.
