Special Sweet Potato Casserole - cooking recipe

Ingredients
    8 medium cooked sweet potatoes, mashed
    1 tsp. salt
    1/4 tsp. mace
    1/4 tsp. cinnamon
    1/4 tsp. nutmeg
    1/4 tsp. ginger
    1 large egg, slightly beaten
    1/2 stick margarine, melted
    3 Tbsp. orange juice
    3/4 c. finely chopped peanuts, divided
    1/2 c. flaked coconut
    1/4 c. brown sugar
Preparation
    Combine
    sweet\tpotatoes
    with next 8 ingredients.
    Add 1/4 cup peanuts, finely chopped.
    Place in a 2 quart casserole and bake at 400\u00b0 for 25 minutes.
    Combine coconut, brown sugar and remaining
    peanuts (1/2 cup).
    Sprinkle over top of sweet potato mixture
    and
    bake approximately 10 minutes longer, or until lightly browned.
    Makes about 6 to 8 servings.
