Artichoke Omelet - cooking recipe

Ingredients
    5 artichoke hearts
    2 Tbsp. minced onion
    1 clove garlic, minced
    3 Tbsp. oil
    3 Tbsp. butter
    5 eggs, beaten
    1/2 c. parmesan cheese
Preparation
    Cook first 5 ingredients in a heavy saucepan until almost done.
    Cool slightly then add eggs and cheese.
    Put in an oiled casserole and bake in a 300\u00b0 oven for 25 to 30 minutes.
