Applesauce Rhubarb Muffins - cooking recipe
Ingredients

2 c. flour
1 c. whole wheat flour
2 tsp. baking powder
2 tsp. cinnamon
1/2 tsp. baking soda
1/2 tsp. salt
2 eggs
1 1/3 c. brown sugar
1 1/2 c. applesauce
1/2 c. oil
1 1/2 c. chopped rhubarb
Preparation

Stir flours, baking powder, cinnamon, baking soda and salt together.
Make well in center and set aside.
In medium bowl, beat eggs and stir in brown sugar, applesauce and oil.
Add egg mixture to well in flour mixture.
Stir until moistened.
Fold in rhubarb. Fill 2/3 full in muffin pan.
Bake at 400\u00b0 for 18 to 20 minutes.
