Lemon Fluff - cooking recipe

Ingredients
    1 box vanilla wafers, crushed
    1 large can milk
    1 large pkg. lemon jello
    1 3/4 c. hot water
    1 c. sugar
    pinch of salt
    1/4 c. lemon juice
    grated lemon rind (optional)
Preparation
    Chill canned milk for several hours.
    Mix jello, hot water and salt.
    Chill until half set; then beat until light and fluffy. Add lemon juice and sugar.
    Beat cream until thick and add to the lemon mixture.
    Crush wafers and cover the bottom of a 9 x 12 x 2-inch dish using only half of crumbs.
    Pour in the mixture and cover with remaining crumbs.
    Chill overnight or at least several hours, until set.
    Will serve 12.
