Crunchy Carrot Balls - cooking recipe

Ingredients
    1 (3 oz.) pkg. cream cheese, softened
    1/2 c. shredded Cheddar cheese
    1 tsp. honey
    1 c. finely shredded carrot
    1/2 to 1/3 c. Grape-Nuts
    1 Tbsp. finely snipped parsley
Preparation
    In medium size mixing bowl, beat cream cheese, Cheddar cheese and honey together until blended.
    Stir in shredded carrots. Cover and chill 30 minutes.
    Shape into fourteen one-inch balls. Cover and chill.
    Just before serving, roll in mixture of cereal and parsley, pressing into cheese to coat.
    Makes 14 balls.
