Spanish Rice And Pork Chops - cooking recipe
Ingredients

6 to 8 center cut chops
1 can peeled tomatoes
1 large white onion, sliced in rings
2 Tbsp. shortening
salt and pepper to taste
1 1/2 c. rice
water
Preparation

Slightly brown chops in shortening in Dutch oven or heavy pot. Remove from fire and place half of the chops in bottom of the pan.
Add rice and then onion rings.
Add tomatoes and remaining chops.
Season to taste.
