Cucumber Soup - cooking recipe

Ingredients
    1 medium onion
    butter or margarine
    2 medium cucumbers
    1 c. white vinegar
    salt and pepper
Preparation
    Pan fry sliced onion in butter or margarine until it begins to brown; remove from heat.
    Thinly slice peeled cucumbers; place in large pot.
    Cover with cold water.
    Add onion, vinegar, salt and pepper.
    Bring to a boil and simmer until cucumber is soft.
    May be thickened with cubed potatoes for longer cooking time or with a white flour roux for immediate serving.
    Serve hot or cold.
